Pomodori alla griglia alle erbe

With summer coming to a close, we want to take advantage of the last of the bounty and beautiful weather. This recipe will help you do both! Tuscan living is about family, friends and sharing time. What better way to embrace the concept than sharing a meal from your grill? These tomatoes make a easy and delicious side that works with any main dish.

Ingredients
4 Roma tomatoes
1 tablespoon fresh basil or 1 teaspoon dried basil, crushed
4 tablespoons dairy sour cream or plain yogurt
2 tablespoon finely shredded or grated Parmesan cheese
1 tablespoon fine dry bread crumbs
Fresh basil for garnish (optional)

Preparation
1. Cut tomatoes in half lengthwise. Spread cut side of each tomato with sour cream or yogurt. Sprinkle each with basil. Sprinkle bread crumbs and Parmesan cheese on tomatoes. Arrange tomato halves in a foil pan.
2. Arrange preheated coals around a drip pan in a covered grill. Test for medium heat. Place the foil pan containing tomatoes on grill over the drip pan. Cover and grill for 10 to 15 minutes or until tomatoes are heated through. If desired garnish with fresh basil. Serves 4.
