Toscana Limonata

Sunny days spent lounging amongst olive and lemon groves surrounded by the picturesque Tuscan country side, must be nearly the most perfect of summer activities. Drink in the sunflowers, breathe deep the perfumed breeze and simply enjoy the pleasures of a day spent in earnest pursuit of nothing at all. This is the essence of what draws many of us to Tuscany. Topping off the day dream this week we bring you refreshment befitting the journey.

Toscana Limonata
Tuscan Lemonade

12 ounces of Limoncello
6 ounces of Lemon flavored vodka
1 cup of fresh squeezed lemon juice
4 cups of Pellegrino or seltzer (or even Pellegrino Limonada)
1 tsp lemon zest
1 tbsp sugar
5-7 fresh mint leaves
Lemon slices to garnish

Ice is key to this drink, be sure to use lots of it! Pour Limoncello and vodka over ice, stir and allow to set while you finish the rest of the preparation. Crush mint leaves and sugar with lemon zest in a large pitcher. Add in vodka, limoncello and Pellegrino. Stir gently. Add more ice and garnish with lemon slices.

Both refreshing and summery, this drink can also be made without alcohol. Simply increase the sugar to 1/2 cup and warm it with 1/2 cup of water over low heat until the sugar devolves. Allow this syrup to cool and repeat the directions above.
